½ cup vegetable oil

1 small yellow onion, chopped

1 cup chopped green onion, white and light green parts only

1 cup chopped fresh flat-leaf parsley

1 cup fresh basil leaves

4 garlic cloves, peeled

½ to 1 Scotch bonnet or habanero chile (depending on how much spice you like!), halved and seeded

Leaves from 3 fresh thyme stems

1 teaspoon minced fresh ginger

2 teaspoons white vinegar

1 teaspoon sugar

1 teaspoon kosher salt

Combine all ingredients in a food processor or blender and process or blend until pureed. Transfer to a lidded jar and refrigerate for up to 1 week. Or spoon into an ice cube tray and freeze until solid, then transfer the cubes to a plastic zip-top storage bag and freeze for up to 1 month.
