VITAMIN D
Vitamin D is a cruel, high-maintenance mistress. It is a fat-soluble family of vitamins that help our body absorb calcium, phosphate, zinc, and magnesium. The most important and potent version is vitamin D3 (cholecalciferol).44 There is also the plant-based vitamin D2 (ergocalciferol). Most food does not contain vitamin D naturally, although you can get some from fish. Like most animals, we can make D3 on our own, but it’s the result of a long, twisted road trip (Figure 7). Most of our vitamin D starts as cholesterol in our skin, but we need ultraviolet radiation to bake it up to form D3. Patience, this is a local train, not an express. The next stop is the liver for its first enzymatic hydroxylation. Not ready yet. Then it heads to the kidneys for a second hydroxylation to become an active hormone called calcitriol. After this it finally hits the circulation system to control calcium and phosphate balance. It also figures centrally in bone and muscle maintenance as well as cardiovascular health. Vitamin D also helps chelate IGF-1, the evil twin of human growth hormone and a primary provocateur of cancer.
