Ingredients:
For salad:
â 1.75 ounces curly kale, discard hard stems and ribs, shredded
â ¼ cup sugar-free dried cranberries
â ¼ cup chopped walnuts
â ¼ pound Brussels sprouts, discard stems and outer leaves, sliced
â 3 slices bacon, cooked, crumbled
â 1/8 cup blue cheese crumbles
For salad dressing:
â 3 tablespoons olive oil
â ½ tablespoon Dijon mustard
â Salt to taste
â 1 tablespoon lemon juice
â ¼ teaspoon garlic powder
â Pepper to taste
Directions:
Add all the ingredients for dressing into a bowl and whisk until thick and emulsified.
Place Brussels sprouts, cranberries, walnuts, bacon, cheese and kale in a bowl. Toss well.
Pour the dressing on top and toss well.
Serve.
