Kale and Brussels Sprout Salad Recipe with Bacon, Cranberries and Pecans (Cracker Barrel)

Net Carbohydrate – 4 g,

Protein – 6 g

Ingredients:

For salad:

● 1.75 ounces curly kale, discard hard stems and ribs, shredded

● ¼ cup sugar-free dried cranberries

● ¼ cup chopped walnuts

● ¼ pound Brussels sprouts, discard stems and outer leaves, sliced

● 3 slices bacon, cooked, crumbled

● 1/8 cup blue cheese crumbles

For salad dressing:

● 3 tablespoons olive oil

● ½ tablespoon Dijon mustard

● Salt to taste

● 1 tablespoon lemon juice

● ¼ teaspoon garlic powder

● Pepper to taste

Directions:

Add all the ingredients for dressing into a bowl and whisk until thick and emulsified.

Place Brussels sprouts, cranberries, walnuts, bacon, cheese and kale in a bowl. Toss well.

Pour the dressing on top and toss well.

Serve.
