Figure 1: The averaged relative environmental impact (AREI) is a metric that condenses information from five environmental indicators: greenhouse gas emissions; land use; water use; eutrophication potential; acidification potential. AREI is plotted against the environmental impact of a serving of vegetables: a food with an AREI of 10 has 10 times the environmental impact of vegetables.

Figure 2: A dot represents the mean impact of the food, while the bars extending from it indicate the plus or minus one times its standard error. These five indicators are used to calculate AREI. Fresh produce includes fruit and vegetables; ruminant meat includes beef, sheep and goat.
