Zucchini Hummus

Chickpea-free hummus is a delicious dip to serve with veggie batons or Paleo-friendly pita. Make sure you include it as part of your buffet party spread.

Yield: 1-2 cups

Total Time: 10mins

Ingredients:

½ cup tahini

2 zucchini (peeled and chopped)

⅓ cup olive oil

⅓ cup fresh lemon juice

3 cloves garlic (peeled)

1½ tsp cumin

Sea salt and ground black pepper (seasoning)

Directions:

1. Add the tahini, zucchini, olive oil, lemon juice, garlic, and cumin to a food blender or processor. Process until smooth and season the hummus to taste with salt and black pepper.

2. Serve the dip with veggie batons or pita.
