David Wondrich posits the idea that this one cocktail, created by Julio Bermejo, of Tommy’s Mexican Restaurant in San Francisco, using fresh lime juice, 100 percent agave tequila, and, in place of the Cointreau, agave syrup, undid much of the 1970s and 1980s Margarita travesties. It was created out of a desire to show off the nuanced flavors of the fine tequilas Bermejo was pouring.

But why is the Tommy’s Margarita in the Daiquiri chapter and not in the Margarita chapter? Because it’s not a Margarita—it’s a Tequila Sour.

The proportions for the Tommy’s Margarita are almost universally accepted: 2 ounces reposado tequila, 1 ounce lime juice, and ½ ounce agave syrup. By all means, give this a try. But I prefer the slightly sweeter proportion of the modern-day sour, which is in fact what the Tommy’s Margarita is.
