Coconut-Psyllium Flattened Bread
Enjoy the taste of this coconut-inspired bread. Do well to savor every chunk of this flatbread.
(Prep + Cooking Time: 20 Minutes| Servings: 1)
Ingredients:
Coconut flour – ½ cup
Warm water – 1 cup
Salt – 1 tsp
Olive oil – 1 tbsp
Baking powder – 1 tsp
Psyllium seed husks – 2 tbsp
Directions:
Mix the coconut flour, baking powder, salt and psyllium husk in medium-to-large mixing bowl.
Add the olive oil and warm water.
Stir gently using a spatula; then use your hands to knead dough. Do this for about 1 minute. The dough should be soft and elastic. Keep it aside for about 10 minutes.
Divide the dough into 4 equal pieces; then roll the pieces into small balls.
Introduce the balls between two pieces of parchment paper, then press the ball with your palm in order to flatten it out.
Cut out round the flattened bread with a plate (you can use the outside bread to make extra balls)
Heat up a cast iron pan over medium-high heat source
Add 1 tsp olive oil to the pan (rub the surface of the pan using an absorbent paper towel to remove the excess oil in the pan).
Flip the flattened bread on the hot pan and peel off gently the remaining parchment paper.
Cook for about 3 minutes on one side, flip over, and then cook for another 2 minutes on the other side.
Do the same for the remaining flattened breads.
