16 â Bacon Vinaigrette Tomato Salad
This beautiful, bright salad is full of flavors. They come from heirloom tomatoes bacon vinaigrette dressing.
Makes 8 Servings
Cooking + Prep Time: 20 minutes
Ingredients:
4 slices of chopped bacon, thick-cut
1 chopped onion, small
3 tbsp. of vinegar, sherry
2 tsp. of mustard, Dijon
2 tbsp. of oil, olive
1 pound of wedge-cut tomatoes, heirloom
1 oz. of crumbled blue cheese
Chopped chives, fresh
Instructions:
1. Cook the bacon in skillet over med. heat while occasionally stirring, till it is crispy, 8-10 minutes. Transfer to paper towels. Pour off grease except for 2 tbsp. reserved.
2. Add the onions to pan. Stir occasionally while cooking till they are tender, four to six minutes. Add mustard and vinegar. Cook and scrape up brown bits till they are incorporated, a minute or so. Remove pan from heat.
3. Whisk in the oil. Arrange the tomatoes on serving platter. Drizzle them with vinaigrette. Top them with bacon, chives and blue cheese and serve.
