1 BASIC BROWN RICE

1 cup long-grain brown rice

2½ cups water

Rinse and drain rice. Bring water to a boil and stir in rice. When water returns to a boil, reduce heat to low and cover. Cook for 40–50 minutes, until rice is tender and most liquid has been absorbed.

Turn off heat and leave rice in the covered pot for 5 minutes before fluffing with a fork.

Makes 3 cups cooked rice.

Per serving: 200 calories, 1 g fat, 43 g total carbohydrate, 0 g dietary fiber, 4 g protein
