Grilled Pineapple with Ginger and Basil Sauce

Fresh ginger and basil perfume this pretty dessert, which is an adaptation of a recipe by Latin American celebrity chef Alfredo Oropeza.

Helpful Hints

Sliced fresh pineapple can be found in the produce section of most supermarkets.

Pineapple can be placed under a broiler instead of on a grill.

Whipped topping should be defrosted in the refrigerator for several hours before using.

1 teaspoon fresh ginger, grated

1/2 tablespoon fresh basil leaves, chopped

1 teaspoon brown sugar

1 slice fresh pineapple, about 1/2-inch thick

Canola oil cooking spray

1/8 teaspoon ground cinnamon

2 tablespoons frozen, nonfat whipped topping (such as Cool Whip), defrosted

Fresh basil leaves for garnish

Combine ginger, basil, and brown sugar in a bowl. Add the pineapple slice and let sit 5 minutes, turn, and let sit 5 minutes to allow flavors to absorb.

Remove pineapple from the bowl, reserve the ginger mixture, and spray both sides with canola oil spray.

Heat a stove-top grill and add pineapple. Grill for 3 to 4 minutes or until it has grill marks and is slightly caramelized, about 3 minutes. Turn and grill until it has grill marks on the other side. Sprinkle with cinnamon.

Remove to a small dessert plate. Mix whipped topping into the ginger mixture and spoon on top of pineapple. Add basil leaves as garnish.

Makes one serving.
