On a wall of Potatopia is the directive “Get Smashed,” which might sound like a call to debauchery but which is actually a serving suggestion. It’s a message that tells you that this is not a baked-potato stand but rather a full-line potato restaurant, at which getting Smashed is only one option. You can get Smashed. You can get Curly. You can get Skin Chip, Shoestring, or Au Gratin. You can get Potato Chip; you can get Sweet Potato Crinkle. You can get not only Baked Potato, but also Baked Sweet Potato, and when you’ve decided which potato to get, the getting has only begun.
Since, by getting a potato, you have chosen to Build Your Own, you can get one or more of 16 toppings, including five different cheeses. You can get a “protein,” meaning shrimp, chicken, steak, bacon, or sausage, and you can get one of 14 sauces. Sour cream is a sauce. If you don’t see yourself as a builder, you can still get. After all, this is the potato utopia. You can choose from the Signature Meals, in which the ingredients have already been gotten. There are six of those, containing as many as 15 toppings and sauces. The one with 15 toppings and sauces is called the Comatoser, which, despite the name, does not involve getting Smashed. It is Skin Chips, with salt, pepper, cheddar cheese, Asiago cheese, pepper jack cheese, green onions, red onions, garlic, cilantro, jalapeño, broccoli, bacon, melted cheddar, roasted pepper aioli, and ranch. Ranch is also a sauce.
All of this was invented by Allen Dikker, who suitably did his inventing in Edison, New Jersey. An ad man with a knack for sauces, he opened his first store in 2011 in the Menlo Park Mall, partly as an out-of-town tryout for a store in New York.
