Garden Salad & Sardines

Serves: 6

Time: 15 Minutes

Ingredients:

1/2 Cup Olive Oil

1 Lemon, Juiced

1 Teaspoon Dijon Mustard

Sea Salt & Black Pepper to Taste

4 Tomatoes, Diced

1 Cucumber, Peeled & Diced

1 lb. Arugula, Trimmed & Chopped

1 Red Onion, Small & Sliced Thin

1 Small Bunch Flat Leaf Parsley, Chopped Rough

4 Sardine Fillets, Whole, Packed in Olive Oil, Drained & Chopped

Directions:

Start by making your dressing. Get out a small bowl and whisk your olive oil, lemon juice, and mustard. Sprinkle in your salt and pepper, and then set it to the side after mixing well.

Get out a large bowl and combine all remaining ingredients except for your sardines to make your salad.

Top with your sardines after dividing between places, and drizzle with dressing before serving immediately.
