This recipe recalls a classic Italian pasta sauced with braised rabbit, with rotisserie chicken (or any cooked chicken you have on hand) standing in for the rabbit. The chicken is folded into a rich, bacon-y cream sauce that drapes perfectly over pappardelle (or other wide noodles) for a comforting dish thatâs as good for a chilly night at home alone as it is for a casual yet special dinner with friends. Kosher salt
225g thick-cut bacon, cut crossways into 1-cm (½-inch)-wide pieces
110g onion, finely chopped
2 garlic cloves, gently smashed and peeled
1 tablespoon plus 1 teaspoon roughly chopped fresh rosemary or 1¼ teaspoons dried
Freshly ground black pepper
370ml double cream
2 (250g) packets pappardelle or other wide noodles
1 medium carrot, finely chopped
840g rotisserie chicken, shredded, at room temperature
Freshly grated Parmigiano-Reggiano cheese for serving
Roughly chopped fresh flat-leaf parsley for serving (optional)
