Breaded Parmesan Bacon Chicken

I Melted The Cheese Before Adding The Bacon.

Yes, this is breaded Parmesan chicken, but we use cheese for the breading, instead of carb-laden bread.

Ingredients:

1 egg, beaten

1 tablespoon water

½ teaspoon salt

1 cup Parmesan cheese

¼ teaspoon garlic powder

¼ teaspoon black pepper

4 boneless chicken breasts

½ cup olive oil

1½ cups Asiago cheese, shredded

4 slices bacon, cooked and crumbled

Directions:

Preheat the oven to 350 degrees Fahrenheit.

In a bowl, mix the egg with the water until well combined and set aside.

In another bowl, combine the Parmesan cheese, salt, pepper, and garlic.

Dip each chicken breast in the egg and then in the cheese mixture.

In a skillet, add the oil and wait until it gets hot. If it isn’t hot enough, the breading will stick to the pan and not the chicken. Fry each chicken breast until it is golden brown.

Line a baking pan with foil and fit a wire rack on top. Place the browned chicken on the rack and slide it in the oven.

Cook for 20 minutes, until the juices run clear. Remove from the oven and turn on the broiler.

Top each breast with Asiago cheese and a strip of bacon, then slide the pan under the broiler to melt the cheese.

Serve immediately.
