CREAMY CHICKEN AND MUSHROOM

Serves: 4

Ingredients:

1lb (450g) chicken breast

½lb (225g) mushrooms sliced

½ cup (120ml) chicken stock

½ cup (120ml) heavy (double) cream

¼ cup (60ml) sour cream

2 cloves garlic

2 tbsp butter

2 tbsp olive oil

2 tbsp fresh thyme leaves

1 tsp fresh parsley

Salt and pepper

1.Using a frying pan, heat half of the olive oil and half of the butter

2.Season the chicken and place in the pan on a medium to high heat until slightly browned on all sides. Remove from the pan and put to one side

3.Add the remainder of the butter and oil to the pan and cook the mushrooms until tender

4.Add garlic, chicken stock and herbs, scraping all the good stuff in the bottom of the pan.

5.Add the double cream and sour cream and simmer until the sauce starts to thicken ensuring the mixture does not boil.
