The innovations didnât stop there. Through the years, pizza recipes continued to take on the flavors and ingredients that were popular in different states. In the 1980s, California chefs began topping pizzas with ingredients that might have seemed unfamiliar elsewhere but were ultra popular within the state. Soon, there were pizzas featuring pesto sauce, barbecue chicken and red onion, avocado, arugula, and even salmon. Pizza had come to represent not just Italy, but the United Statesâand whatâs more, there were now pizzas to represent different parts of the country!
