Chapter Eight

A slow day at Made to Confection unfolded the morning after her talk with Tony. Holly decided to take advantage of the lull. The kitchen smelled of lemons and coconut as she transformed the citrus Dale and Georgia gave her into tasty chocolates.

Using a saucepan and a portable electric burner, Holly heated up sugar and heavy cream with a few other ingredients until it all melted together. She brought the mixture to a boil and transferred it into the bowl of a stand mixer, where she added some butter and let the machine do the rest of the work.

Meanwhile, Holly combined lemon juice and salt in a measuring cup and poured the contents into the bowl of the stand mixer. She waited for it to combine, then covered the container and moved it into the fridge.

While she let it set, she melted some milk chocolate in a melter and grabbed a clean tray from a rack. Holly arranged small baking cups on the tray until it was filled to capacity. Then she spread a sheet of parchment paper onto the counter.

Once the milk chocolate was tempered, she retrieved the chilled filling and used a cookie scooper to form them into balls. One by one, she carefully dipped them into the chocolate until they were coated and allowed the excess to drip back into the melter. Holly placed them on the parchment sheet.

When all of the filling had been formed into balls and dipped, Holly topped the chocolates with shaved coconut and nestled each of them into one of the baking cups. She repeated the process until she had broken down the whole box of lemons.

After she rolled and dipped the last one, she stretched. Since the chocolate had finished hardening, she swapped her messy gloves for fresh ones and carried one of the trays out into the lobby. With care, she opened the backing to a display case and filled up an empty row of acrylic stands with the new chocolates.

Holly prepared a sign that read COCONUT LEMON CREAMS and placed it at the front of the display case for customers to see. Then she returned to the kitchen and boxed up a few to take over to the Sweet Tooth Packing House.

Back in the lobby, she turned to Sheldon. “Will you watch the shop for me? I’ve got an errand to run.”

“You got it.”

Holly bagged the chocolates and drove over to the packing house to deliver the coconut lemon creams. She parked in the back lot and stepped out of her truck. As she was locking the door, she noticed one of her loyal customers, Harriet, walking out to her own car with a phone in her hand.

“I understand how you feel, but you owe me an explanation at some point. That favor I did for you was a pretty big deal, you know. If he finds out…” Holly heard her say.

When Harriet spotted Holly, her jaw dropped. “I’ve got to let you go. Okay. Talk to you soon.
