Once cooked, add the salt and use a potato masher or fork to mash everything together.

Crack the eggs on top of the mash, cover and cook over low heat for 10 more minutes, or until the eggs are cooked through.

Serve warm topped with avocado.

Tip:

Be careful that the mash does not burn on the bottom while the eggs are cooking.
