Paula isn't super fond of this one. She is a baker and says she can make her own trenchers.

Which she can.

So can I.

I bake too, and I use a bread machine to make the dough, just like Paula does. Either of us can bake bread without using the bread machine or a stand mixer with a dough hook. We know how, but we almost never do. For that matter, I also buy bread fairly regularly: hamburger buns, Hawaiian bread, that sort of thing. I can make them too, but it's not worth the trouble. I contend that given the option down-timers, at least some middle class down-timers, will make the same decision. When they are going to have a picnic or family gathering rather than spending all day up to their elbow in dough, they will opt to buy trenchers.

But I know the really poor down-timers won't do that because they can afford the elbow grease more than the cash. So I assumed from the beginning that the market would be relatively small and the profit margin not great.
