1 teaspoon olive oil
2 (4-ounce) boneless, skinless chicken breasts
Pinch of kosher salt
Pinch of freshly ground black pepper
½ teaspoon pumpkin pie spice
2 green apples, cored and cut into medium slices
1 fresh sage sprig
1.In a large skillet, heat the oil over medium-low heat.
2.Lightly sprinkle the chicken on both sides with the salt, pepper, and pumpkin pie spice. Place the chicken in the center of the hot pan and surround it with the apples. Top with the sage and cook for 12 minutes, or until browned on the bottom.
3.Flip the chicken, stir the apples, cover, and cook for 10 to 12 minutes, until the chicken is cooked through and no longer pink in the center and the apples are soft.
4.Discard the sage and top the chicken with the apples to serve.
