2. Top with lightly mashed baked beans, red bell pepper, shredded cheese, and remaining tortilla.

3. Microwave for 1-2 minutes, or until cheese has melted.

4. Remove from the microwave, cut into quarters, and serve with salsa, if desired.

How to Store: in the refrigerator for up to one day.
