Go ahead—ask my son James what his favorite food is. Or you could just ask him what he requests for his birthday dinner every year. He takes his baked mac ’n’ cheese very seriously, and I do not mess around when that kid gets hungry. Rawr. Everyone else is pleased when I make this dish, too. Freshly shredded cheddar is a must here—it melts far better than the preshredded kind. The cracker topping is so 1980s (hey, fellow ’80s babies!), but this dish just isn’t the same without it. (Ritz is what I reach for, though saltines also work.) Buttery, crunchy, cheesy pasta: it’s going to be your new birthday dinner request, too.
