Mediterranean Grilled Shrimp

Preparation time: 20 minutes

Cooking time: 5 minutes

Servings: 4-7

Ingredients:

2 tablespoons garlic, minced

½ cup lemon juice

3 tablespoons fresh Italian parsley, finely chopped

¼ cup extra-virgin olive oil

1 teaspoon salt

2 pounds jumbo shrimp (21-25), peeled and deveined

Directions:

In a large bowl, mix the garlic, lemon juice, parsley, olive oil, and salt.

Add the shrimp to the bowl and toss to make sure all the pieces are coated with the marinade. Let the shrimp sit for 15 minutes.

Preheat a grill, grill pan, or lightly oiled skillet to high heat. While heating, thread about 5 to 6 pieces of shrimp onto each skewer.

Place the skewers on the grill, grill pan, or skillet and cook for 2 to 3 minutes on each side until cooked through. Serve warm.
