Green Goddess Cobb Salad (Panera Bread)

Ingredients:

For salad:

● 4 large chicken breasts, cooked, cut into cubes

● 12 slices bacon, cooked, crumbled

● 2 cups halved cherry tomatoes

● 2 cups sliced black olives

● 8 hard-boiled eggs, peeled, halved or quartered

● 4 avocados, peeled, pitted, cut into cubes

● 4 heads romaine lettuce, thinly sliced

For green goddess dressing:

● 2 ripe medium avocados, peeled, pitted, chopped

● 1 teaspoon fish sauce

● 1 cup olive oil

● 1 handful fresh basil

● 2 handfuls fresh parsley

● 2 tablespoons chopped fresh tarragon leaves

Directions:

To make dressing: blend together all the ingredients for green goddess dressing in a food processor until smooth.

Transfer into a bowl. Cover and set aside for a while for the flavors to blend in.

Divide lettuce leaves into 4 plates.

Arrange the chicken, bacon, tomatoes, olives, avocados and eggs (divide them equally into 4 portions) over the lettuce leaves.

Divide equally the dressing and spoon over the salad.
