LADY CARNARVON’S FENNEL, BLOOD ORANGE AND WALNUT SALAD

I am always looking for colourful salads to offer in winter, and equally I often use nuts to give a little energy boost at this time of year, when it is most needed.

I was lucky enough to be asked to explore an orange grove in Sicily and I have never forgotten the experience of just picking an orange and standing eating the extraordinary luscious fruit straight from the tree – nothing has ever tasted quite so good. Sicilian oranges are, of course, exported over here, and are delicious, but given the time spent in transport and storage, they cannot have the same overflowing taste.

Blood oranges need the cool fall in night temperatures to create their vivid colour, which looks sensational in Christmas salads or puddings.

Another key ingredient here is fennel – not everyone likes fennel, but I do. It was thought to help with eyesight, and Henry Longfellow wrote about it thus:

Above the lower plants it towers, / The Fennel with its yellow flowers;

And in an earlier age than ours / Was gifted with the wondrous powers / Lost vision to restore.
