Brown butter, milk chocolate and pretzel blondies

I used to think I didn’t like blondies: tooth-achingly sweet and always tasting too much like raw cookie batter. But when I decided to write a book about butter, I knew it had to include the butter-heavy, butterscotch blondie. So, I gritted my teeth and got to work. And I was so very wrong. Blondies need brown butter to give them a rounded flavour, which isn’t one-note sweet; they need textural contrast – salted pretzels to provide crunch, milk chocolate in big chunks – and they need to be baked and rested so that they sit in the sweet spot of squidge.

A good blondie is (whisper it) often better than a good brownie. I know! If that doesn’t entice you into making these, I don’t know what will.
