Traditional Brisket

Brisket is a cut of meat from the breast or lower chest of a cow. This tough cut of meat becomes tender and succulent after being slow cooked in a special sauce with onions, garlic, carrots, and potatoes at a low temperature for many hours. The sauce is the wildcard in every recipe and ranges from BBQ, sweet and sour, or red wine to Coca-Cola or coffee infused.

Plant-based Jackfruit Brisket

This jackfruit brisket is savory, slightly sweet, and delicious. It is meat-free and oil-free. In place of those heavy ingredients, we’re using jackfruit—a tropical fruit with a meaty texture similar to that of shredded slow-cooked meat. The sauce is made from tomato passata, soy sauce, yellow mustard, and maple syrup.

Jackfruit Brisket Variations

■ Texture: add thinly sliced shiitake mushrooms to make the jackfruit mixture more meat-like in texture and flavor.

■ Spice: add minced red chili to the braising liquid for a spicy brisket.

■ Serving ideas: serve with boiled or mashed potatoes and a green salad.

Jackfruit Brisket

Cook time: 40 minutes

■ Sharp knife

Ingredients

■ 2 cups (450 ml) tomato passata

■ 3 tablespoons maple syrup

■ 1 tablespoon apple cider vinegar

■ 2 tablespoons soy sauce

■ 1 tablespoon yellow mustard

■ ¼ cup (60 ml) water

■ 1 small onion, thinly sliced

■ 2 garlic cloves, minced

■ 1 teaspoon ground cumin

■ 1 20 oz. (570 g) can jackfruit, rinsed and drained

■ Salt and pepper to taste

Instructions

1. In a large pot combine passata, maple syrup, apple cider vinegar, soy sauce, mustard, and water. Whisk to combine.

2. Add in the onion, garlic, and cumin and season with a large pinch of salt and pepper. Place over medium heat.

3. Bring the mixture to a boil and add in the jackfruit. Reduce the heat to medium-low and cover. Let the jackfruit cook until you can easily shred it with a fork, around 30 to 40 minutes.

4. Use two forks to shred the jackfruit and transfer to a large serving dish.
