Fried potatoes with vegetables

Ingredients for two servings:

5 large waxy potatoes cut into large pieces⭐500 g frozen Kaiser vegetables

200 ml vegetable broth

2 tablespoons of olive oil ⭐1 teaspoon of paprika powder ⭐1 tablespoon of finely chopped coriander ⭐sea salt and pepper.

Preparation:

Thaw the vegetables in a saucepan over medium heat.

Heat the olive oil in a pan, fry the potatoes for 2 minutes and deglaze with the vegetable stock. Let the potatoes simmer for 15 minutes, pour off the broth, season with paprika powder, salt and pepper and divide these, together with the imperial vegetables, on 2 plates and garnish with coriander.
