Blueberry “Pumble”

Is it a pie? Is it a crumble? It’s a pumble! I’m not sure I can quite say I created it, but when you want the best of both worlds, this pumble gives you a flaky pastry base bursting with a blueberry filling, then topped with a crunchy oat crumble. Although it takes some time, laminating the pie dough is going to give us all those buttery layers, and is by far the best way to make pie dough. Serve it warm with a scoop of Vanilla Bean Ice Cream and watch it melt into the middle.
