All-Exciting Christmas Recipes: Christmas Foods That Everyone Will Be Talking About by April Blomgren

Instructions:

1. Place brisket on a rimmed baking sheet and season both sides with salt and black pepper. Marinate uncovered in the refrigerator for at least 12 hours.

2. Preheat oven to 300 degrees F.

3. Heat 2 tbsp of oil in large Dutch oven over medium heat and sear brisket on both sides until golden brown, 10 to 12 minutes. Transfer to a plate and set aside.

4. Discard fat in pot and heat in remaining oil. Sauté onion until tender and browning; season with salt and black pepper, 3 minutes. Add celery stalks, fennel, garlic, and thyme; mix well and cook until tender.

5. Mix in Worcestershire sauce, vinegar, and 4 cups of water. Return brisket to pot, bring to a boil and then simmer for 5 minutes. Cover pot, place in the oven, and cook for about 3 hours or till tender. Uncover pot and cook further for 50 to 60 minutes or until braising liquid reduces by three-fourth and brisket is deeply browned and crisp.

6. Remove pot from oven, transfer meat to chopping board and let sit for 5 minutes before slicing into bite-size portions.

7. Spread celery leaves and herbs on serving platter, drizzle with lemon juice and arrange meat on top. Sprinkle with red pepper flakes, flaky salt, and serve.
