BROTHER VICTOR’S CAULIFLOWER FRITTERS Serves 4
What could be more fun than a crunchy, cheesy cauliflower fritter made with monastery cheese? Only a monk could dream up such a delicious combination that’s also easy to make. This recipe is adapted from Brother Victor-Antoine d’Avila-Latourrette’s book From a Monastery Kitchen: The Classic Natural Foods Cookbook.
1 egg, lightly beaten
¾ cup whole milk
¾ cup all-purpose flour
¾ cup (about 1 ounce) finely grated Gethsemani cheese (see Note) or other Trappist-style cheese
Salt
1 small head cauliflower, trimmed of leaves
Canola or vegetable oil for deep-frying
