Wash the clam shells well under cold running water and discard any that are open or that won’t close if you tap them.

In a large wide pan, melt 2 tablespoons of the butter. Add the onions and garlic and cook over a low heat for 10 minutes, until the onion is soft but not coloured. Add the chilli, clams and white wine and bring to a rapid boil. As soon as the clams open, lift them out of the pan with a slotted spoon and put them into a bowl. Remove the shells from half of them and discard these – so you have a mix of clams in and out of shells. Bring the liquid in the pan to a rapid boil to allow it to reduce by half, then add the cream and bring back to a simmer.

Meanwhile, drop the linguine into a large pan of salted boiling water. Cook until just al dente (if using fresh pasta, this will probably be less than 2 minutes). Drain, then add to the pan of sauce, along with the reserved clams.

Toss the pasta lightly with the sauce, adding the remaining butter a knob at a time. When it is all absorbed and the sauce is thick and silky, add the lemon juice and herbs. Taste and season as necessary, and serve immediately.
