Directions

1.Starting with an empty bag, hold up the tip to the pointed end of the bag and cut the opening of the bag halfway up the tip. This creates an opening that is the perfect size for the next step, which is opening the bag and inserting the tip.

2.Now place the bag with the tip already inserted in a cup; fold the sides over the lip of the cup and fill with your favorite floral piping color. Tie up the bag and give the icing a squeeze until the icing emerges from the tip. This first flower will be the largest and the center of attention, so pick your favorite spot for its placement.

3.Hold your piping bag perpendicular to the cookie, start at the center of the flower, and moving in a counterclockwise motion, create a swirl; either go around twice or stop at your preferred size.

4.Moving on to your next flower, use a different color to pipe a large dot next to your large center flower. Immediately add 3 pearl sprinkles; push them down into the icing to create the floral center.

5.Flower number three will be your second largest flower. Pipe a dot that is only slightly smaller than your center flower.

6.Using the same color and starting from the outside edge, outline the dot and create a swirl ending in the center.

7.The final flower type is really simple, and it is designed to fill in any “holes” in the design you think are visually missing something. You will find odd numbers look best; I chose to create three flowers. Pipe small dots in your last floral color, and quickly add a single pearl sprinkle to the center, pushing it in for added detail.

8.The final touch is adding leaves. Make sure your green piping bag has a leaf slit. A good rule of thumb is smaller flowers need one leaf, while bigger florals need 2–3.

9.Play around with what you like; this is the last step, and your final touches should add a cohesive polished look to the floral piece. Since the your cookies that you are using for a base are already dry, you will only need 1–2 hours for the floral detail to set completely before you’re able to store them in an airtight container.

This chapter was a big one, covering three different designs and two holidays, all with one cutter. I hope your new skills will encourage you to branch out and trust your own creative eye and to explore your own designs. Small changes to the same cookies can have such a large impact.

Notes

•For those of you looking to skip a few steps (hello, me!), using all white flowers gives an added touch of elegance to your pumpkins without having to make any additional colors.

•Pumpkins naturally grow on vines; add this detail onto your cookies using brown or green piping for a more realistic vibe.
