THE UNITED STEAKS
Americans eat a lot of beef. How much? In 2007 they consumed more than 28 billion pounds of it. That averages out to nearly 70 pounds per person. And the fast-food industry is spending billions of dollars annually in advertising to keep that consumption high. But it wasn’t always this way: Before the Industrial Revolution, beef was a luxury that few people could afford. Then the introduction of the refrigerated rail car led to the “Western Cattle Boom” of the 1880s—and the birth of the modern beef industry. By 1900 cow meat was a staple of the American diet.
In the 1950s, the emergence of the fast-food industry—with the hamburger at the forefront—created a huge growth in demand for cattle. With that came the rise of a few large companies that would come to dominate the beef business. The industry has had its share of scrutiny over the years: Upton Sinclair’s 1906 bestseller The Jungle, a brutal depiction of unsafe meatpacking practices, led to many reforms. It didn’t really slow down U.S. beef consumption, though, which remains very high today, in spite of all the environmental and health concerns that activists have been pointing out since the 1970s.
About 80,000 edible plants grow on Earth, but only about 150 of them are cultivated.
