Hedgehog Mushroom Risotto

If you can get your hands on hedgehog mushrooms, they add a lemony, chickeny quality that is really perfect in this setting. In the fall, I love to make a batch of mushroom risotto and a salad like the kale Caesar in Tartine Bread, pour glasses of dry white table wine, leave the hunk of Parmesan on the table, and listen to the wacky local independent radio station.

2 quarts vegetable or mushroom stock

1 onion

5 tablespoons cold butter, divided

About 1 cup dry white wine

1¾ cups arborio rice

Hedgehog or other similar wild mushrooms

Parmesan
