Collard Greens Soup

Servings: 6

Preparation Time: 15 minutes

Cooking Time: 50 minutes

Ingredients:

2 tablespoons olive oil

1 large white onion, chopped

pinch of salt

2 large leeks, sliced

2 tablespoons fresh ginger, minced

1 large bunch collard greens, chopped

8 cups low-fat chicken broth

freshly ground black pepper, as required

1 tablespoon fresh lemon juice

Instructions:

In a large soup pan, heat the oil over low heat and cook the onion and salt for about 20 minutes, stirring occasionally.

Stir in the leeks and cook for about 10 minutes.

Stir in ginger and greens and cook for about 5 minutes.

Add the broth and stir to combine.

Increase the heat to medium-high and bring to a boil.

Reduce the heat to medium and cook for about 10 minutes.

Remove from the heat and set aside to cool slightly.

In a blender, add the soup mixture and pulse until smooth.

Return the soup in the same pan over medium heat and cook for about 5 minutes.

Stir in the lemon juice and black pepper and serve hot.
