Vanilla Latte Overnight Oats

Dairy-free, Gluten-free, No-cook, Vegetarian

SERVES 2 | PREP TIME: 5 minutes | CHILL TIME: 4 hours

I’m a hard-core coffee lover. I love the flavor, I love the energy—and now I love it in oats. These oats, which have a powerful energy boost with a splash of cold brew and taste like your favorite vanilla latte, might be the best oats I’ve ever tasted.

1 cup rolled oats, divided

1 cup whole milk, divided

½ cup cold brew coffee, divided (see Substitution Tip )

½ cup vanilla protein powder, divided (see Substitution Tip )

2 tablespoons almond butter, divided

2 tablespoons chia seeds, divided

1 tablespoon maple syrup, divided

½ teaspoon vanilla extract, divided

1. Divide the oats, milk, coffee, protein powder, almond butter, chia seeds, maple syrup, and vanilla equally between two resealable containers, such as large mason jars. Mix the contents of each container well and place them in the refrigerator for a minimum of 4 hours or up to 5 days.

2. Enjoy hot or cold. To heat, microwave for 1 to 2 minutes.
