1 tablespoon kosher salt, plus more as needed

24 circular wonton wrappers

½ cup ricotta cheese

12 medium egg yolks

Flaky sea salt, freshly ground black pepper, and hot sauce, for serving

1 Bring a large pot of water to boil over high heat. Add the salt.

2 Place 12 wonton wrappers on a work surface. Scoop four ½-teaspoon mounds of ricotta onto each wrapper, leaving a ½-inch border and the wrapper exposed in the center of the ricotta scoops. Add an egg yolk to the center of each ricotta circle. (It should look like a fried egg with very puffy whites.) Season the ricotta and yolk with a pinch of salt on each wrapper.

3 Fill a small bowl with cold water. Working one at a time, dip a finger into the bowl and wet the edges of one of the filled wrappers. Place one of the remaining unfilled wrappers on top and press firmly to seal the edges, being careful not to break the yolk. Repeat with the remaining wrappers.

4 When the water is boiling, use a spider skimmer or a slotted spoon to gently lower 6 of the ravioli into the pot. Boil, undisturbed, for 3 to 5 minutes, until the ravioli are al dente and translucent. Transfer the ravioli to a paper towel–lined plate and repeat with the remaining 6 ravioli.

5 Arrange the ravioli on a serving plate or individual plates. Season with flaky salt and plenty of pepper. Finish with a drizzle of hot sauce and serve.
