36_Fig and Anise-Flaxseed Muffins
Serves 12
Ingredients:
â cup cut dried figs
2 tablespoons water
1â cups white whole wheat flour
â cup ground flaxseed
â cup + a pair of tablespoons sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground anise seed
¼ teaspoon salt 1 cup low-fat buttermilk
1 massive egg 3 tablespoons canola oil
1 teaspoon grated orange zest
Directions:
1. Heat up kitchen appliance to 375°F.
2. Place figs and water in little microwavable bowl. cowl with paper and microwave on High till softened, thirty seconds. Set aside.
3. Whisk along flour, flaxseed, â cup of sugar, baking powder, baking soda, anise seed, and salt in massive bowl. Beat milk, egg, oil, and orange peel in medium bowl till blended. Stir in fig mixture.
4. Spoon batter into ready cups. Sprinkle with remaining a pair of tablespoons sugar.
