Easy Keto Cauliflower Gnocchi

Disguising food as gnocchi is a great way to sneak veggies into kids’ diet! Makes 2 servings.

Ingredients:

• Olive oil for drizzling

• ¾ cup low fat coconut milk

• 3/4 cup cauliflower, florets

• 1/3 tbsp cassava flour

• 1 1/2 tsp tapioca flour

• ½ tsp thyme

• 3/4 tsp garlic, minced

• ½ tsp lemon peel

Directions:

Steam cauliflower 5-7 minutes, ring out water, put in blender along with cassava flour and smoked paprika.

Blend until mix is smooth.

Cut each segment into 1-inch pieces, drop them into boiling water and let rise to surface.

In pot whisk together coconut milk, minced garlic, lemon peel, pepper, tapioca flour. Stirring continuously until smooth and thickens.

Place cauliflower pieces in pot and coat well with sauce.

Cook on high pressure 20-30 minutes.
