Chickpeas, Kale, Tomatoes Eggs

Serves 1

Ingredients - Allergies: SF, GF, DF, NF

• 2 large eggs

• Salt

• Ground black pepper

• 1 tsp. olive oil or avocado oil

• 1/3 cup sliced tomatoes

• 1/3 cup kale

• 1 cup cooked chickpeas

Instructions

Heat 1 tsp. olive oil in the skillet over (medium/high) heat. Add kale, tomatoes and chickpeas and cook, tossing, until kale wilts (Approx.3-4 minutes). Remove kale, chickpeas and tomatoes and season with sat and pepper. Fry eggs until done. Serve with kale, chickpeas and tomatoes.
