Chickpeas, Kale, Tomatoes Eggs
Serves 1
Ingredients - Allergies: SF, GF, DF, NF
⢠2 large eggs
⢠Salt
⢠Ground black pepper
⢠1 tsp. olive oil or avocado oil
⢠1/3 cup sliced tomatoes
⢠1/3 cup kale
⢠1 cup cooked chickpeas
Instructions
Heat 1 tsp. olive oil in the skillet over (medium/high) heat. Add kale, tomatoes and chickpeas and cook, tossing, until kale wilts (Approx.3-4 minutes). Remove kale, chickpeas and tomatoes and season with sat and pepper. Fry eggs until done. Serve with kale, chickpeas and tomatoes.
