This is likely my husband’s favorite recipe. It is super simple to throw together and so ridiculously flavorful! The only cooking this dish requires is in preparing the cauliflower rice. Here, I’m showing you how to steam it in a skillet, but you are welcome to buy the cauliflower rice that steams in a bag and use that to further simplify things. This recipe is made to feed one person (it’s a generous serving), so double it or triple it depending on how many you are serving.

PREP TIME 15 minutes

TOTAL TIME 20 minutes

MAKES 1 serving

CAULIFLOWER RICE

2 cups (8 ounces, or 225 g) cauliflower rice

1 tablespoon (15 ml) extra-virgin olive oil

Salt and black pepper, to taste

SPICY MAYO

2 tablespoons (28 g) mayo

1 teaspoon sriracha or hot sauce

TUNA & VEGGIES & SESAME-SOY SAUCE

3 ounces (85 g) sushi-grade tuna, cut into 1/2-inch (1 cm) cubes

1/2 cup (70 g) diced cucumber, 1/2-inch (1 cm) cubes

1/4 cup (35 g) shredded purple cabbage

1/4 cup (28 g) grated carrot

1/4 cup (21 g) microgreens

3 tablespoons (45 ml) coconut aminos

11/2 teaspoons extra-virgin olive oil

1 teaspoon rice vinegar

1/2 avocado, sliced

Sesame seeds, for garnish
