Walnut Ginger Shortbread Cookies

INGREDIENTS

½ cup (one stick) butter (room temperature)

1 egg yolk (room temperature)

1 cup powdered sugar

½ cup crystallized ginger chopped into tiny bits

½ cup walnut flour

1 ¼ cup all-purpose flour

¼ cup corn flour

½ teaspoon salt

Cream the butter and the egg yolk together until fluffy.

In another bowl, combine the remaining ingredients: sugar, ginger, walnut flour, all-purpose flour, corn flour, and salt.

Add the flour mixture to the butter/egg mixture, about 2 Tablespoons at a time mixing gently. Don’t overmix.

Pour the dough on parchment paper or plastic wrap and gently roll into a log about 2 inches in diameter.

Chill the dough in the refrigerator for at least four hours or overnight.

When ready, preheat oven to 300F.

Cut the log into 1/4 inch thick rounds and place on baking tray lined with parchment paper.

Bake for 20-22 minutes to preferred doneness.
