Kim Verbsky and Snapper Verbsky are busy people. Snapper, his given name, has a construction company and they are raising a family. So no big deal to start a pizzeria and brewery, right? What started as a pizzeria in Hillsboro evolved into a brewery for Snapper’s dad, Joe, to test his skills as a home brewer.

Kim and Snapper had just opened the restaurant when Joe died unexpectedly. His porter recipe, named Joe, lives on and according to Snapper has become the most popular beer for locals.

Veteran brewer David Bietz is in charge of brewery operations, including the production center a couple blocks away from the pub.

“I’m more of a tank scrub who writes the checks,” Snapper said.

Beers are distributed north to LaCrosse and south to Madison. Outside Hillsboro, Bohemian Club Pilsner is the most popular. Except for Baraboo, where the Irish as Feck Irish Red Ale is beloved.

The pub is working on more crossover between food and beer. Brisket has long been simmered in brew but cooks are now playing with ways to put spent grain in the pizza crusts.

“We’re a small brewery and we’re always going to be a small brewery,” Snapper said. He credits his wife with the original credo: “Do a few things and do them well.”
