Ingredients:

• 1 lb. pork loin, cut into strips.

• ½ tsp. grated ginger

• Salt and pepper to taste

• 1 1/3 cups flour

• 1 egg white

• 1 small sliced onion

• 1 sliced carrot

• 1 diced bell pepper

• ½ cup diced pineapple

• ¼ cup brown sugar

• 3 tbsp. cider vinegar

• ¼ cup canola oil

• 1 tsp. sesame oil

Directions:

1 Combine the flour with 2 cups of water and set aside for 2 hours.

2 Mix grated ginger, salt, and pepper.

3 Season the pork slices with the mixture.

4 Coat the pork slices with the wet flour.

5 Heat the canola oil in a skillet and fry the pork strips for 5 minutes until they are crisp.

6 Use a tong to remove the pork and drain on a paper towel.

7 In a skillet, heat the sesame seed oil, then sauté the onion and carrot for 2 minutes.

8 Stir in the peppers, pineapple, vinegar, and sugar and add 1 cup of water.

9 Cook for 8 minutes until the sauce thickens.

10 Add the pork and stir for 5 minutes.

11 Serve the crispy pork and sauce with white rice.
