Spicy Mustard Chicken

Serves: 4

Prep time: 65 min

Ingredients:

4 chicken breasts

2 garlic cloves, crushed

1/3 cup chicken broth

3 tbsp Dijon mustard

1 tsp chili powder

Directions:

In a small bowl, mix the mustard, chicken broth, garlic and chili. Marinate the chicken for 30 minutes.

Bake in a preheated to 375 F oven for 35 minutes.

Walnut and Oregano Crusted Chicken

Serves: 4

Prep time: 35-40 min

Ingredients:

4 skinless, boneless chicken breasts

10-12 fresh oregano leaves

1/2 cup walnuts, chopped

2 garlic cloves, chopped

2 eggs, beaten

Directions:

Blend the garlic, oregano and walnuts in a food processor until a rough crumb is formed. Place this mixture on a plate.

Whisk eggs in a deep bowl. Dip each chicken breast in the beaten egg then roll it in the walnut mixture. Place coated chicken on a baking tray and bake at 375 F for 13 minutes each side.
