Aeolian-Style Pan-Roasted Cod Fillet

This dish brings me back to my childhood Sicilian summers, when my family and I used to spend our holidays each year at a different Aeolian island, usually Vulcano, Filicudi or Salina. While there, we lived in a sort of island bubble, savoring each and every day spent at the beach and all the precious moments spent cooking and eating the local specialties together. Aeolian-style dishes usually feature a simple, quick sauce made with local olives, capers, cherry tomatoes and bits of wild fennel tips, if available—which I’ve omitted here because they’re darn hard to find outside of Sicily!

I’ve used cod fillets for this simple version, because they’re inexpensive and widely available. If you can get your hands on a fresh swordfish steak, then go for it—it will taste amazing!
