Ingredients for approx. 2 liters:

1.5 kg beef bones (beef marrow bones or similar)

2 tbsp apple cider vinegar

2 carrots, 150 g celeriac

1 leek, 1 onion

4 cloves of garlic

2-3 parsley roots (approx. 100 g)

2 bay leaves, 5 juniper berries

4 allspice grains

1 teaspoon thyme or 2-3 twigs

½ teaspoon rosemary or 1-2 twigs

1 teaspoon peppercorns (black)

Preparation:

Cut the onion into small pieces and sauté in a large saucepan. Meanwhile wash the bones with cold water. Then deglaze the onion with 3-3 ½ l water and add the bones. Also add the apple cider vinegar and the spices (thyme, rosemary, allspice, juniper, pepper, bay leaf). Now bring everything to a boil and then simmer on a medium heat near the boiling point for about 5 hours. After the 5 hours, the vegetables that have been diced or sliced ​​in the meantime, as well as the garlic and parsley that have been finely chopped, are added to the saucepan. Now everything is cooked again over low heat for 45 minutes. Finally the broth is sieved (alternatively with contents) and served. It is advisable to remove the bones and any meat that may be on them and use them as a soup.
