Why does it do this?
When the camera manufacture designed your camera they studied many thousands, if not millions, of photographs to determine how much light the average photo needs. They removed all the colour and analysed the resulting black and white images, measuring all the light levels to find the average. The net result was 18% and this became the industry standard for camera meters. Every camera meter will calculate the exposure it needs to turn the scene in front of it to 18% grey.
