Smack in the center of the United States sits Peoria, Illinois, once the largest distilling city in the country. Quality water, abundant grains, an emerging railroad system, and access to the Illinois Riverâa tributary of the Mississippiâall contributed to the emergence of Peoriaâs alcohol industry. Peoria alone produced 18 million gallons of alcohol in 1880, three million more than all of Kentucky. Good times rolled in Illinois from the mid-century until the once-mighty Peoria liquor hub was hobbled by the dismantling of the Whiskey Trust and then knocked out by Prohibition.
